THE PAIRING
First course: Homemade focaccia bread, cherry tomatoes and soup of the day. 1st olive oil: fruity but gentle.
Second course: Artichokes, cime di rapa, burrata. 2nd olive oil: bitter and spicy.
Third course: Ham and baked potatoes. 3rd olive oil: strong and spicy, but round (alternative vegetarian / vegan plate).
Dessert: Olive oil cake, ice cream and dark chocolate.
All the olive oils served are extra virgin, from high quality producers across countries like Greece, Spain, Italy, France and Croatia.


THE MASTERCLASS
Origins: when was olive oil firstly invented and how did it spread around the world?
Geography: who are the main producers and which countries consume the most olive oil?
Production: what are the main steps of the process to make olive oil? And extra virgin?
Pairing: what criteria should be followed to pair olive oil with food? Do's and don't.
Assessment: how to evaluate an olive oil, its aromas and scent, step by step.
An intimate experience and a Mediterranean dinner in a relaxed, social setting.
