
Here's the thing: as an Italian I have always abused of olive oil in my meals but I never thought I'd spend time learning and experimenting with it. When I moved to the Netherlands, I recall my father suggesting me to import olive oil from our home country saying "great natural products should be available to everyone".
Just recently though I took a course at the Italian School of Sommelier and spent time studying, tasting, re-tasting, and reading about extra virgin olive oil. It got me thinking. Most people would know the basics of wine, beer, tea or kombucha, things they drink maybe once or twice a week; no one has knowledge about olive oil, something they ingest several time per day. How comes?
Extra virgin olive oil holds significant anti-inflammatory and anti-aging features that can improve people health across multiple areas. Depending on its origin and variety, olive oil also delivers scents and flavors that pair better with one or another ingredient. How does modern cuisine get it so wrong?
